Quesadillas are my favorite go-to food when I need a quick homemade meal. I love traditional ingredients (beans and cheese) but sometimes I want to try something a little more creative. Here are some suggestions:

{Food Friday} Peanut Noodles

First and foremost, a great big happy birthday to our wonderful friend Jeff!! We think you’re awesome!

Peanut noodles are an easy introduction into Asian cuisine because they use pretty ‘normal’ ingredients, there is minimal cooking, and the sauce provides some good protein. This dish is also vegan, which means that there are no animal products used (no meat, eggs, or dairy).

Ingredients

  • 1/2 lb spaghetti, fettuccine, or other long pasta
  • any vegetables you choose (such as red pepper, carrot, or broccoli), chopped or julienned
  • 2 scallions, chopped (optional)

Sauce Ingredients

  • 2-3 Tbsp peanut butter
  • 1/2 cup vegetable broth
  • 2-3 Tbsp soy sauce
  • 2 Tbsp crushed red pepper flakes

Directions

  1. Cook pasta according to package directions. Drain. Place pasta in large serving bowl.
  2. In a small bowl, whisk together all sauce ingredients. Taste; adjust seasonings as needed.
  3. Pour sauce over pasta. Stir well.
  4. Stir in chopped vegetables and scallions. Serve immediately.
