Quesadillas are my favorite go-to food when I need a quick homemade meal. I love traditional ingredients (beans and cheese) but sometimes I want to try something a little more creative. Here are some suggestions:

• Spinach Strawberry Salad – A classic summery salad; especially wonderful if you love fresh fruit in your meals. This link also includes the recipe for a poppyseed dressing.

• Greens with Cucumbers, Walnuts, and Blue Cheese – This could be wonderful as a side or main dish.

• Autumn Salmon Salad with Honey-Apple Cider Vinaigrette – I just want to point out the beautiful roasted beets in this salad. With or without the salmon, this one is definitely worth a try.
